As Thanksgiving is right around the corner, I thought I would share some quotes that resonate with me. Thanksgiving is a holiday that I love! It is a great time to reflect on the year and all the things to be thankful for. It can be so easy to dwell on the negative, but Thanksgiving reminds us about how truly blessed we are. Before I went vegan two years ago, I ate just about everything and it was so easy to get full on all the meat, potatoes, and pie. Thankfully, there are many meat alternatives to choose from today, as well as other vegan entrée options.
I will be making vegan lasagna for Thanksgiving this year as I love it and it is very warm and comforting during the rainy cold weather. I have shared a recipe that I have found online that I use and just add a little additional kite hill ricotta for taste, additional protein, and extra veggies! This dish has also been great for my training! It gives my body a good amount of carbohydrates for energy during long training sessions, and protein (when I add beefless crumbles, or protein rich vegetables) to help rebuild my muscles after training.
